Ask my family; I wanted nothing to do with the kitchen nor cooking back in the day. I’d much rather be in my room, lost in a good book or soaking in my favorite TV shows.

These days, mommyhood and the wife life has me whipping up dishes and researching creative meals way more than I thought I’d ever be.

And surprisingly, I like it!

Next to cooking for my fam, I love putting together a quick meal to take to a gathering with friends and family. Like these spinach and bacon stuffed mushrooms that literally get the party going.

I made them once for friends and once for family; both times they were a hit so I thought I’d share the recipe with you!

Spinach + Bacon Stuffed Mushrooms

Ingredient List

  • Baby Bella mushrooms
  • Fresh spinach, chopped
  • Diced bacon strips
  • 1 small onion, chopped
  • Salt
  • Pepper
  • Parmesan Cheese
  • Olive Oil
  • Diced Garlic

How to Make

Start by peeling the top layer of the mushrooms. I learned this trick from the chef who taught me how to make this recipe. After peeling, sprinkle slightly with olive and a dash of salt and pepper and set aside.

Next, fry down a few strips of bacon. I save the bacon fat and use it in the next step!

Keeping bacon and its fat in the pan, add in your onions and garlic and continue to fry until fragrant. You should get the wonderful aromas of this delicious mix.

We all know spinach has no loyalty, so freely add your chopped spinach to the pan because we know a lot of it will disappear soon. Continue to cook this mixture until spinach has moderately wilted.

Next, head back to your peeled raw mushrooms and start spooning your spinach and bacon mixture into each mushroom, making sure each one gets a little bit of everything; spinach, onions and bacon. Add your filled mushrooms to your baking dish.

After filling each mushroom with your mixture, sprinkle them all with parmesan cheese…lots of parmesan cheese!

Place pan in oven and bake at 375-degrees for 20 minutes or until mushrooms are cooked all the way through and ENJOY!

This is for sure my go-to recipe when I’m doing potlucks with my friends or family; it’s super easy to make and so delicious!

Trying this recipe? Let me know how your stuffed mushrooms turn out!
